What is the "God of the gaps" criticism?

Evolutionists accuse creationists of inventing the idea of God to explain the unknown. God then is nothing more than a concept to fill the gaps in knowledge about our world. However, this is not the case. Creation scientists attribute to God that which science has determined to be best explained as a work of God. For example, scientists such as Louis Pasteur have determined that all cells come from pre-existing cells. This is called the law of biogenesis. This law is not due to a lack of knowledge but rather the discovery and confirmation of knowledge. Likewise, scientists have discovered that populations resist change rather than continually change over time. Further, they have observed that as genetic load (mutations) in a population increases, the population’s ability to thrive diminishes. Thus, for creation scientists, God is not an excuse for the unknown. He is the conclusion based on empirical evidence.
